Spinach and Tofeta Triangles

We always have puff pastry in our freezer which is amazing because I can make things like these little spinach and 'Tofeta' triangles at a moment's notice (provided I have spinach and tofu of course...)
And never mind paying through the nose for pre-made tofeta (it goes for around $5 a tiny jar at my local supermarket). All you need is crumbled hard tofu, lemon juice and salt and you get a pretty tasty feta substitute.

For the triangles I fried a diced onion in olive oil with a pinch of rosemary leaves until tender. Then I added half a block of crumbled tofu, a pinch of dried herbs, a pinch of garlic flakes, the juice of a lemon and salt and pepper to taste. You may want to add a fair bit of salt to get that feta taste. I stir-fried the mixture until heated through and added a big handful of washed spinach leaves. Leave a fair bit of moisture on the leaves as this will keep the mix moist and help the spinach wilt. Once the leaves wilted I spooned it into puff pastry squares. I folded the squares over into triangles, pressed the edges together and sprinkled the tops with paprika. Then I put them in the oven at 180C and baked until the pastry was golden and flaky. AMAZING! I think I'll make these for the bloggers potluck on Saturday...
