Banana French toast

Camping was amazing, but it was nice to come back to showers, flushing toilets (with DOORS that LOCK), and super amazing cooked breakfasts. And thanks to daylight savings clicking over in the wee hours of Sunday morning, we got an extra hour of breakfast time! I made myself and Tim some banana French toast using a mashed up squishy banana that came back from camping, blended into enough soymilk to make a runny batter. Four slices of wholemeal bread were dipped in and fried till crispy. We had these with a generous spread of Sophie's damson plum and ginger jam.

Oh gosh, I believe you about the awesomeness of the french toast, but a part of me refuses to believe that camping can be wonderful :P Which is kinda weird, because I'm definitely not a high-maintenance-two-hours-in-the-bathroom-to-get-ready-girl.

But I do hate mosquitos...

Nice! that looks so tasty! After camping, I would have insisted on breakfast in bed with the banana french toast, jam and freshly squeezed orange juice. :-)

I haven't made french toast with bananas before, but I bet it would make them extra moist and gummy (in a good way), so I'll put that on my to-do list. That jam sounds delish, too!
