Lately, with the abundance of organic produce in the house, I've been gorging on huge batches of roasted vegetables for dinner. Here's last night's combination: roasted beetroot, onion, eshallots, garlic, potato, pumpkin, mushroom, zucchini and cherry tomato, with corn cut from the cob, Vegie Deli sage and marjoram sausages, sprinkled with sesame and chia seeds, and served with a huge scoop of my home-made pink pickled cabbage (I could eat a jar of this on its own!). Such a satisfying meal - and the leftovers are coming camping with me this weekend. See ya!

Roasted vegetable menagerie
